Many restaurants change and develop their dishes in reflection of the seasons and the flavours they each bring. At the Gallery of Modern Art, however, it is the exhibitions that change and the chefs at Foyer Bistro use this as inspiration for their menu. Depending upon which artist is the flavour of the moment, Foyer Bistro gathers relative aspects – homeland or subject matter for example – and reflects their influences on a plate. The result is a vibrant expanse of worldly dishes which, when placed in front of you, is an artwork in its own right.


Foyer Bistro’s menu is comprised of four different sections to suit patrons at different times of the day. These are simply drink, sustenance, high tea and food. For a little pick-me-up to keep your art appreciating eyes alert, try an amuse-bouche, which are single French tasting plates not unlike the Spanish tapas. There are nine of these to choose from including warmed marinated olives with chilli, lightly crumbed goujons with traditional tartare, or pepper dew filled with tuna or fetta mousse. Move on to the bistro’s signature dish for a hearty meal of fresh seared scallops with an orange and fennel salad, adorned with slow roasted prosciutto and dressed with a mustard vinaigrette, candied paint and chive oil. Foyer Bistro is the perfect way to complement a day of wandering the rooms with cuisine that continues the creative experience.
